Comments

-Handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
-Refrigeration units were at 4 degrees C or less.
-Freezers temperature was satisfactory -18 oC
-Food storage areas appeared clean and organized.
-Hot-held food was at 60 degrees C or hotter.
-Dishwasher final rinse chlorine sanitizer residual was at 100 ppm.
-Glasswasher Chlorine residual was at 50 ppm, kitchen manager tested using test strip
-Test strips and food thermometers are available.
-200 ppm QUATS sanitizer was available in the sanitizer pails and spray bottles.
-Cooking utensils are kept in cold/ice water between uses.
-3-compartment sink and sink with overhead sprayer were supplied with hot and cold running water. Three sink plugs were available.
-Deli slicer and all knives were a clean condition.
-Ice machine was in a clean condition.
-General sanitation is good at time of visit.
-FS trained staff on duty
-Temp log is in place and up to date
-Good personal hygiene noted by staff

** Reach in freezer lid is in bad condition, sandwich prep cutting boards is getting rough
** Better cleaning is required for hard to reach areas - under and behind equipmemt.
