- Hand washing sink supplied with hot and cold running water, liquid soap, and paper towels.
- Quats sanitizer solution available at 200 ppm in spray bottle.
- Low-temperature chemical dishwasher dispensed 100 ppm chlorine to the dish surface, detected after rinse cycle. Good. Reminder to use test strips to check sanitizer concentration daily.
- All coolers were measured at 4C or colder
- All freezer temperatures satisfactory
- Hot-held food items measured at above 60C. Sandwich filling pouches are being properly reheated to at least 74C in boiling water prior to placing in hot water bath for hot-holding. Good.
- Food storage practices satisfactory
- Equipment maintained in sanitary conditions. **Reminder that in-use utensils must be held in ice (at 4C or colder) or washed and sanitized in dishwasher every 2 hours.
- General sanitation satisfactory at time of inspection
