304 - Premises not free of pests [s. 26(a)] Observation: Rodent droppings observed in front concession area. Premises has a pest control contract in place. Corrective Action(s): Bin and lid all food items that can potentailly be chewed ie chips Bin and lid all single use utensils ie knives, forks, plates etc. Bin and lid all cultery used in food preparation. Clean and sanitize all shelving and flooring below concession equipment. Deploy glue boards at night as discussed. Violation Score: 15 306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: Pizza oven rollers/mesh observed with grease and food build up Corrective Action(s): Clean pizza oven roolers/mesh Violation Score: 3 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: Traulsen upright cooler not properly cold holding. No food observed stored inside. Cooler temperature measured at 6c. This was noted in my previous inspection report on November 4. Corrective Action(s): Repair cooler so that it is capable of cold holding at <4c. Violation Score: 9 311 - Premises not maintained as per approved plans [s. 6(1)(b)] Observation: Plumbing leak observed below the 2 compartment sink in pizza prep room. Toilet observed to be damaged and in non working order in employee washrrom in pizza prep room. Corrective Action(s): Repair plumbing leak Repair toilet. Violation Score: 3 315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)] Observation: Traulsen fridge is lacking an accurate thermometer inside the unit. Corrective Action(s): Purchase an accurate thermometer. Violation Score: 1
