Routine inspection conducted. The following was observed:
1. Temperatures
- Walk-in cooler at 4C
- Prep cooler at 3C
- Sweets cooler at 3C
- Beverage cooler at 9C (only for carbonated beverages)
- Chest freezer at -16C (front of house) - chest freezer in kitchen has been replaced with a prep table
- Temperature logs maintained. NOTE: Cooling logs were not kept up-to-date. You must make sure that you log the temperature of your cooled items (e.g. at 60C and at the 2, 4, and 6 hour mark)
- Chicken on racks were recently made and cooling at approximately 30C
- Operator instructed to rapidly cool all stews / curries / soups in ice wands, rice placed in shallow containers for rapid cooling
2. Hygiene and Sanitizing
- Hand wash stations adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Ventilation canopy is in good sanitary condition and was recently serviced
3. Pests
- No recent, visible signs of pest activity observed at time of inspection
- Professional pest control company does conducts monthly checks - no invoice provided to EHO at time of inspection. Obtain the invoice & report and provide to the EHO
- Mechanical traps, as observed in previous inspection, need to be RESET as discussed before
4. Administrative
- Operator has FoodSafe 1 (Expiry: February 6, 2024)
- Permit to operate posted
