205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Pizza toppings at prep cooler ranged from 4-8C. Inserts were filled all the way to the top.
Measured the following items with probe thermometer: 1) Chicken, bacon, pepperoni, ham, sausage were all at 6-8C. 2) Cheeses, cut vegetables, and sauces were between 4-5C.
Corrective Action(s): Meat items were discarded at time of inspection. Vegetables, cheese, and sauce were returned to walk-in cooler.
***Only fill inserts half full to promote better air circulation and ensure faster turnover times. Ensure to discard unused toppings every 2 hours until cooler is capable of maintaining temperatures at or below 4C.
