Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)] (Seafood and meats were stored in a cooler insert at 10C. Internal temperature of the items were at 10C. Cooler was in a "defrost cycle" at 10C for over 2 hours - ambient temperature did not decrease at time of inspection.

Corrective action: Seafood and meat were placed in another cooler maintaining 4C or lower, and placed on ice. Maintenance crew was called in to adjust the defrost cycle later in the day.
Potentially hazardous foods should be kept at or below 4C at all times to prevent rapid bacterial growth.)

Follow-up inspection was conducted.

Saute cooler insert is now maintaining an ambient temperature of 4C. Meat inside cooler had an internal temperature of 4C.
Other notes:
- Sanitizing pails are being considered for use in the kitchen. A total of 6 pails will be added (3 in cook line, 3 at back prep area). Update health inspector on status.
- Handwash sinks in bar are clean and no longer have debris/clutter. All bar staff sent memo to keep handsinks in sanitary condition - excellent.
- Technician who services the saute prep cooler has stated that a tube supplying refrigerent fluid to cooler was clogged, which may have led to the elevated temperatures observed at last inspection. It has now been unclogged.
