Observation: Excessive dust build up noticed underneath and behind the upright freezer, deep freezers (located in dry storage) and all upright coolers in the kitchen area. Grease build up noticed on the small metal shelf next to the range.
Corrective Action(s): 1. Clean thorouhgly underneath and behind all coolers and freezers.
2. Remove dust build up from compressors in all coolers
3. Remove food spills from underenath the microwave.
4. Clean the metal shelf and floor underneath the shelf to remove grease and oil build up. ( By April 15, 2018).

Observation: The countertop above the dishwasher is in poor shape and appears to be rotting.
Corrective Action(s): Replace the countertop with washable altenative such as stainless steel work table. Ensure to remove old caulking from behind
the triple sink and recaulk with silcone based caulk. ( By April 25, 2018). Replace any shelving that has deteriorated from moisture damage.

Deep freezers and upright freezers below -18 degrees C.
Hot holding of rice > 60 C.
Liquid soap and paper towels available at the hand sink.
Wiping cloths stored in 200 ppm chlorine bleach sanitizer.
Dishwasher reached 76.9 degrees C at the plate surface during final rinse.
