Observation: Observed significant number of small flies (similar to fruit flies) throughout kitchen area, particularly in the dishwashing area, on the wall under dishwasher, mop sink, corner between line coolers across from grill area, and staff washroom area.
Corrective Action(s): Starting immediately, thoroughly clean premise removing all accumulated grease and food debris and have appropriate fly traps set up in a way that food/ food contact surfaces are not compromised.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build-up of grease and food debris found in the hard to reach areas of kitchen. Also noted brackish pooling water underneath the dishwasher. Both issues are contributing to fly infestation.
Corrective Action(s): Give premise a thorough and deep clean in all hard to reach areas including (but not limited to) floors and walls behind and between all kitchen equipment, floors/walls behind/under dishwasher, floors in dry storage room, vent in ceiling space in back of dry storage room. Observation: Felt a significant positive air flow up from floor drain immediately next to grease trap. Smell of sewer gas present in immediate area.
Corrective Action(s): Immediately cover/seal floor drain with an easily removable cover (for in the event quick access to drain is needed) until a permanent solution is found. Permanenty repair floor drain to prevent sewer gas from flowing back into building. Due: Oct 30th, 2020.
