(Across parking lot - Compass Group) Transported to Kin Court South - hot held - served - leftovers discarded. - Temperature Control: No concerns. Monitoring required. - Mechanical Dishwasher (High Temp) = Ok. Ensure all items are being cleaned and disinfected after use. All items are to be stored in a sanitary manner. Air drying permitted only - do not use cloth towels. - Wiping cloth storage discussed. Limit the number pf cloths being used. Cloths are to be kept completely submerged in the sanitizer buckets.
