Observation: * Cleaning of ceiling to be completed in main kitchen area and any where there is build up of grime/debris; operator mentioned they were thinking to repaint the ceiling in main kitchen again as it has badly stained over the years.
Corrective Action(s): * Ensure ceiling in main kitchen properly cleaned and maintained as part of routing cleaning schedule; repainting can be done after cleanning completed, but cleaning must be done frequently enough so build up of grime/debris not accumulating

* Cleaning improvements noted through out; complete all cleaning of ceiling in main kitchen area as only part of cleaning there was done
* Note: operator working on dish washing process to ensure dish ware, etc., coming out of dishwasher in clean/sanitary manner and free of grease/debris
* Note: operator also ordering new dishware as some dishes have lost their finish and no longer considered food grade or usable
* Operator adding additional dishwasher (so two dishwashers) and adding new strainer system for pre-cleaning process; operator working with dishwashing staff to pre-clean dishware properly prior to running them through dishwasher for complete washing/sanitizing process; pre-cleaning process is very important to remove most of the debris/grease prior to cleaning/sanitizing through dishwasher
