Observation (CORRECTED DURING INSPECTION): During inspection, the following food products were stored at room temperature in the front area and recorded at an internal temperature of:
- Container of sprouts soaked in water at 17.6C
- Half container of cut limes at 16.9C
- Half container of sliced jalapeno at 17.7C
- Container of basil soaked in water at 17.0C
- Half bowl of sliced jalapeno at 20.2C
- Half bowl of cut limes at 18.3C
Staff confirmed that the abovementioned potentially hazardous food was stored outside at room temperature for more than 4 hours. Abovementioned food products were discarded by staff at the time of inspection.
Corrective Action(s): Always store/display cold potentially hazardous food at or below 4C.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. In the walk in freezer, multiple containers of frozen food were either left uncovered or stacked on top of one another with food in direct contact with underneath of other container. This could result in potential contamination of food. Operator placed lids of some of the containers during inspection.
2. Small bowls were observed in the dry food bins. The bowls were in direct contact with the food. This could result in potential food contamination during food handling. Staff removed the bowls at the time of inspection.
Corrective Action(s): To prevent the risk of food contamination, please cover the food properly with lids/food grade material and use proper scoops with handles for handling food. Always store scoops in a sanitary manner.

Observation: 1. Thick build up of grease/oil observed on the vents.
2. Sugar/syrup spill noted under the shelving unit in dry storage room.
3. Build up of food debris/dirt noted behind the cooking line.
Corrective Action(s): Please clean the facility regularly to prevent build up of food debris/grease/dirt.

Routine inspection conducted.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Temperature of prep coolers (x2) recorded below 4C
- Walk in cooler at 4C
- Walk in freezer at -11C
- Front undercounter coolers (x2) below 4C
- Cooked rice hot held above 60C

Storage:
- All food items were stored at least 6" off the floor.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer spray bottle available and the concentration of bleach noted at 200ppm.
- High temp mechanical dishwasher reached 76C on plate level during rinse cycle.
- Ice machine maintained in good sanitary condition. Scoops stored outside the bin.

Pest Management:
- No visible signs of pest activity observed at the time of inspection.

Administrative:
- Operator has valid FoodSafe Level 1 certificate.
- Operator stated that they have not received a copy of Health Permit. District EHO provided the contact number of billing clerk.
