Observation: Prep board used for making sandwiches was worn out and had deep cuts on both the surface and edges.
Corrective Action(s): Ensure that the food contact surface is in good working order. Replace the prep board with a new one having smooth and easy to clean surface. Since the other side of the prep board is still unused and found smooth, this side can also be used for food preparation.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature:
- Sandwich display cooler at 2C.
- Prep cooler at 4C.
- Stand up cooler at -1C.
- Stand up freezer at -18C.
- Small prep cooler at 4C.
- Soup hot holding at 65C.
- Front hot holding unit at 73C.

Hygiene and Sanitizing:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in front service area.
- Sanitizer spray bottle available and the concentration of QUATS noted at 200ppm.
- Sanitizer dispenser releases 200 ppm QUATS at 3-compartment sink.

Storage:
- All food items were stored at least 6" off the floor.
- All products were either in original packaging or covered.
- Chemicals and cleaners were stored separate from food preparation areas.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- General sanitation is good.
