Observation (CORRECTED DURING INSPECTION): - Dust, food debris and residue present on floor in corner by walk-in cooler
- Food debris (ie. seeds, bread crumbs) noted on electrical conduits along wall behind cake decorating area and bread slicer. Food splatter also noted on wall in this area.
Corrective Action(s): - Clean the above mentioned areas. Ensure they are cleaned regularly so that area is maintained in sanitary condition and so that food debris/residue does not attract or provide a food source for pests.
Cleaning was completed at the time of the inspection.

Comments

- General sanitation of bakery area was satisfactory with the exception of areas noted in violation above (corrected at time of inspection)
- Handwashing sink was supplied with liquid soap and paper towel.
- Manual dishwashing method used to wash dishes/utensils. Quats sanitizer (200ppm) present from dispenser at warewashing sinks for sanitizing step.
- Quats sanitizer (200ppm) present in spray bottles for sanitizing food contact surfaces
- Coolers (walk-in, worktop and display) were operating at 4C or colder
- Retail bakery freezer -24C
- No evidence of pest infestation noted at time of the inspection. Traps present as part of regular monitoring/control program through pest control company.
