Observation: Main meat cooler at cookline measured 12 to 15 C. Mostly raw meats and whole eggs.
Correction: relocate all raw proteins to alternate cooling unit immediately. Call service technician to repair cooling unit. Have all cooling units checked and fixed prior to use. Follow up inspection required.
Comments

Prep cooler re-purposed for raw veges only. Service technician to come later today. Upright cooler now houses the meat and proteins and is keeping less than 4 C.
**Send pics of prep cooler at proper temperature to my office.

General clean up completed and fruit/drain fly population significantly reduced. Linens bagged in garbage bag until scheduled pick up. Make sure to monitor floor drain and mop sink area for fly activity and take action as discussed.
