Observation: Staff designated to handle raw chicken used several timers to keep track of time. The manager noted that the timers get wiped down with sanitized cloth at the end of the day.
Corrective Action(s): As the timers are frequently contacted by a person handling raw chicken during operation, wiping it with a sanitized cloth once a day is not adequate. The timers shall be sanitized every 2 hours. Ensure the cloth used to wipe the timers are completely soaked in sanitizer bucket with 200ppm QUAT.

- Handsink maintained with hot & cold running water, liquid soap and paper towel
- 200ppm QUAT sanitizer present in the sanitizer bucket and in the 3 compartment sink
- Temperatures of refrigeration units were adequate (<4C)
- Hot holding (gravy) temperature was adequate (>60C)
- Good temperature monitoring log in place
- Good prevention of cross-contamination practice in place (only a designated staff may handle raw chicken)
- General sanitation is adequate
- No signs of pest infestation
- Ensure to de-clutter the storage area after delivery is received
