Observation (CORRECTED DURING INSPECTION): - Trays of raw eggs stored over ready to eat items (margarine) in walk-in cooler. Lid on magarine was not fully closed.
Corrective Action(s): - Store products of raw animal origin beneath ready to eat items in the walk-in cooler. Ensure lids are tightly sealed to prevent contamination.

Comments

- Kitchen, storage areas and equipment maintained in a sanitary condition
- Handsinks supplied with hot and cold running water, liquid soap and paper towel
- Temperatures of cold holding equipment was acceptable:
- Walk-in (dairy) cooler 3C
- Walk-in cooler 4C
- Walk-in freezer -20C
- Food stored in hot holding unit (warmer) measured 74C
- High temperature dishwasher operational. Final rinse measured 72.2C
- Temperatures (cold holding, hot holding and dishwasher) are monitored and recorded twice daily. Records were up to date.
- Quats sanitizer solution present in sani-buckets. Concentration measured 200ppm.
- Kitchen staff wear hair nets.
- Dry storage area well organized with food stored off of the floor.
- No signs of pest issues noted at the time of the inspection. Pest control contract in place with monthly service.
- Food service supervisor present and has completed Foodsafe level 1.
