Observation: > 500 PPM QUAT detected in almost all (except for 2) sanitizer containers available throughout the food prep area and from the wall mounted dispenser.
Corrective Action(s): Manually dilute the sanitizer concentration so the required concentration as per the manufacturer's recommendation is available.
When the concentration is over the amount required, the sanitizer may become a chemical hazard to food.
Manager called the chemical company to come over and dilute the wall mounted dispenser so the appropriate amount will be available when dispense.

Routine inspection conducted today:
Handwash stations, including staff washroom, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
All freezer units were at -18.0C or below.
Hot hold units were noted over 60.0C.
Interior of the ice machine and food contact surfaces noted during the inspection were sanitary and in good condition.
High temperature dish machine was able to reach 77.0C at the plate level during the rinse cycle.
No signs of pest activities noted during the inspection.
Overall sanitation and organization excellent.
