Comments

- Staff stated that the prep cooler was malfunctioning and that it had broken while loading the bottom compartment with food that morning; food was being moved from the prep cooler to the walk-in cooler
- Foods in the cooler measured approximately 10C but had not been there for more than two hours (from time of loading of the bottom compartment to the time that the issue was noticed)
- Staff have already contacted maintenance to fix the cooler - until the cooler has been fixed, store the food in the walk-in cooler
- If the cooler has not been fixed and toppings need to be taken out of the cooler to accommodate a dinner rush, ensure that an ice bath is available to keep the food at 4C or below

- All other coolers measured 4C or colder
- Sanitizer measured 200ppm quats
- Handsink stocked with soap, paper towels and hot and cold running water
- Temperature logs available for review - ensure that they are maintained
- Foods labelled with dates to facilitate FIFO
- General sanitation is satisfactory
- Good hand hygiene observed
- FOODSAFE requirements met at the time of inspection
