Observation: OUTSTANDING: 2 issues:
-rodent droppings observed under the sushi bar counter, in the dry storage area (dishwasher room) shelves, under the table next to the walk-in cooler, around the empty pop cans stored in the hallway, under the mop sink, and on undercounter shelves behind the sushi bar
-7X live/dead cockroaches observed in sticky traps around the server POS station. operator has obtained professional pest control services to service the area with traps
Corrective Action(s): Conduct a thoroughly cleaning of the facility with particular attention to the above noted areas. Continue to pull equipment from walls and clean with a 100 ppm chlorine bleach solution

recommend having bait/poison set out for cockroaches to control cockroach issue in the server POS station and stop it from spreading into the kitchen. refer to professional pest control service.

Cleaning conducted in the back of house around the double door cooler, around the tempura station, behind the drink cooler, behind the sodas in the dishwashing area, in the router and modem area, throughout the boiler room, underneath tables next to the walk-in cooler, and in the cinder blocks at the sushi bar.
Boiler room has been organized and shoes have been removed, lighting has improved - good
Operator has contacted pest control to service the POS area for cockroaches - good
