Observation (CORRECTED DURING INSPECTION): Deli slicer was found to have old food debris under the sharpening guard.
Corrective Action(s): Ensure deli slicer is properly disassembled for proper cleaning and sanitizing after each use to prevent potential contamination of foods. Slicer was cleaned and sanitized at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Cafeteria line coolers were less than 4C.
-Both upright freezers were less than -18C.
-High temperature dishwasher had a final rinse temperature of 76C on the dish surface (minimum 71C required for proper sanitizing).
-Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer pails were at 200ppm.
-Quats sanitizer dispenser was tested at 200ppm. Sanitizer dispenser needs to run for about 5 seconds prior to filling containers to allow time for concentrate to feed to the automatic dispenser.
-Ice machine was clean and sanitary. Ice scoops stored in a sanitary manner.
-Foods in the dry storage area were in good condition and were stored off the floor.
-General food storage practices satisfactory at the time of inspection. Foods properly stored off the floor and covered. A couple scoops were found stored inside ingredient containers with the handle in the ingredients. Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods.
-General sanitation good at the time of inspection.
-Facility serviced by a professional pest control operator. No signs of pests noted at the time of inspection. Sticky tape inside tin cats were found to have some drain flies.
