Observation: 0 PPM iodine residual detected in the bar low temperature dish machine. Iodine container feeding into the machine was empty at the time of inspection.
Operator called in the machine for servicing during the inspection.
Date to be corrected by: Immediately
Corrective Action(s): Do not use the bar dish machine until it has been serviced and capable of detecting 12.5 - 25 PPM iodine residual at the glass/ plate level after the rinse cycle. Operator is to use the main dishmachine until the bar dishmachine is fixed.

Observation (CORRECTED DURING INSPECTION): Missing paper towel noted in the paper towel dispenser at the handwash stations in the servery area and in the cook line.
**Issue corrected at the time of inspection** Staff replaced new rolls of paper towel into both paper towel dispensers.
Corrective Action(s): Ensure handwash station is always equipped with hot and cold running water, liquid soap and paper towel to allow staff to perform handwashing when required.

Observation: 1. Bowls, with no handles, noted in the bulk rice and cornstarch containers for use as dispensers.
2. Multiple containers of food noted stored on the floor in the walk-in cooler.
3. Ice buildup noted in the walk-in freezer.

Corrective Action(s): 1. Switch out all bulk food containers containing bowls and use proper dispensers with handles.
2. All food items must be stored at least 6 inches off the floor to allow for effective cleaning and sanitation of the floor.
3. Defrost the freezer and remove the ice buildup to avoid potential contamination of food stored in the freezer.

Observation: 1. Grease and carbon buildup noted on the floor below the oven and deep fryer.
2. Debris and black buildup noted on the floor below the 2-part sink and dishmachine area.
3. Organic buidup noted on the soda gun nozzle head holder.
4. Black buildup noted on the interior (by the door) of the walk-in cooler (unit closest to the prep line).

Corrective Action(s): Wash, rinse and sanitize the abovementioned areas. Any buildup of grease, carbon and organic buildup may become a food source for pest. Maintain these areas in a sanitary condition after cleaning.

Observation: Prep cooler ambient temperature was not maintained at ≤ 4C during the inspection - noted at 4.9C and 6.4C when verified twiced during the inspection with a calibrated thermometer.
As per operator, the temprature of the prep cooler was checked this morning and it was running at 4.0C. Operator verified that the staff was opening and closing the prep cooler earlier to prepare salad and that may have caused the elevation in temperature.

Corrective Action(s): Operator moved all cold potentially hazardous food from this prep cooler to another functioning cooler (walk-in cooler). The temperature of the prep cooler will be monitored. Once the tempeature is ≤ 4C, then cold potentially hazardous food can be returned to this cooler. If temperature does not reach ≤ 4C, the prep cooler may not be used until it is serviced.

Observation: Cracked/ chipped wall tiles, leading to exposed wood, noted by the walk-in cooler.

Corrective Action(s): Repair the broken/ cracked wall tiles. All surfaces in the food preparation area must be maintained in a smooth condition that is imprevious to moisture to allow for effective cleaning and sanitation.

Routine inspection completed today:
Refrigerator units (except for unit noted under violation 308) were at ≤ 4C.
Freezer units were at ≤ -18C.
All foods in the refrigerator and freezer units were stored protected and in the correct storage hierarchy.
Hot hold units were holding food > 60C.
200 PPM QUAT detected in the sanitizer spray bottle and wall-mounted dispenser in the back of house.
50 PPM chlorine residual detected in the low temperature dish machine.
Ice machine noted in a sanitary condition.
No signs of pest activities noted during the inspection.
Operator's FOODSAFE level 1 verified - expires October 2022.

No signature required due to COVID-19.
