Follow-up inspection conducted. There was no sanitizer available in the food preparation area again. The sanitizer pail was turned over and completely dry. Third compartment of the 3-comp sink was filled with water. No chlorine residual or QUATS was detected. The QUATS dispenser was not functioning. The inspector explained the bleach to water ratios again to the staff member (5 ml of bleach per 1 L of water). Sanitizer was prepared at the time of inspection - 200 ppm chlorine residual solution. All food contact surfaces were sanitized in front of the inspector. The inspector discussed the violations with the owner over the phone. Inspector will return to follow-up. Signature not required due to the COVID-19 pandemic.
