Comments

- Temperature Control: No concerns noted this date. Monitoring is required to be conducted. (ie: Secondary cook step prior to hot holding is being conducted.)
- Manual Dishwashing: (4 Step - chlorine) Sink drains are required to be kept accessible at all times!
- Ensure all food contact surfaces are to be cleaned and disinfected after use or on a timely manner. (ie: 3-4 hours) All items are to be stored in a sanitary manner. (ie: upper shelves)
- Spray bottles are labelled. Sanitizer is Ok
- Wiping cloth storage: PREVIOUSLY NOTED. - Use 100ppm bleach - 30 ml (2 tablespoons) of 5% unscented bleach in 4.5 litres (1 gallon) of water. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
- Food Storage: Acceptable.
- Sanitary Facilities: Refer to Violation Notes.
- Chemical Storage: Ok. All items are to be stored separated from any food items.
- Staff Hygiene: Discussed.
- Sanitation: Facility is required to be kept clean and organized at all times. All items are to be stored in designated areas. Prep line/shelves are required to be organized.
- Pest Control: Monitoring is required to be conducted. No signs noted this date.
- Garbage, Recycling and Composting Disposal: All items are to be kept stored in covered, rodent proof containers. Storage area is to be kept clean.
- Food Safe Trained staff is required to be on site, at all times. Expiration dates discussed. Certificates are to be kept on site!
- Corporate Food Safety Plan and Sanitation Plan is to be kept on site for reference. Staff are to be trained accordingly. Generic copy provided.
