Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: The sanitizer bottle was empty. No chlorine residual measured at the time/in final cycle. Old chlorine bottle replaced but still no residual on the plate surface. Test strips are available and daily sanitizer concentration should be measured and recorded.
Correction: For now, they will use 2 compartment sink that use sanitizer, quat, that has been measured at 200ppm. Wash dishes in the low temp dishwasher and sanitized in the sink with supplied sanitizer. Follow up inspection will be conducted on Thursday ( February 7th ).

The following violations have been corrected:
302- low temperature dishwasher supplied with bleach/chlorine at 50ppm
Daily temperature log is available and up to date;(sanitizer concentration is also recorded ).
Meat and raw food items have been reorganized.
All food has been stored and organized/no food stored on the floor at the room temperature.
