All coolers (4) are at 4 C or colder - good. Keep temperature records.
Frozen food is thawed in fridge.
Reheating food on stove in hot water bath - is meeting reheating criteria (reached 74 C quickly within 30 minutes).
Hot holding - rice recently cooked is at 60 C or hotter on stove.
Cooling of hot rice - reviewed procedures for quick cooling. Leave cover off to let steam escape.
Hand washing sink has liquid soap, paper towels in dispenser, and hot/cold water.
Chlorine sanitizer is in spray bottle (or you can use bucket) for sanitizing counters, food contact surfaces, and equipment.
The commercial dishwasher has a final sanitizing rinse of 71C (measured inside of the machine) - good. The gauge reads 90C.
