Observation (CORRECTED DURING INSPECTION): During time of inspection, food grade chlorine sanitizer solution located at various station had 0 ppm chlorine residual reading
This will not effectively disinfect surfaces and kill pathogens
Corrective Action(s): Ensure that ALL chlorine sanitizer solutions have at least 100-200ppm chlorine residual at ALL times
Ensure that staff are cleaning and then using this food grade chlorine sanitizer to sanitize food contact surfaces

Observation (CORRECTED DURING INSPECTION): - During time of inspection, several handwashing stations were observed to be blocked with pots, etc stored within

Corrective Action(s): - Ensure that handwashing are kept free from obstruction so that all staff can adequately and frequently wash their hands with ease

Observation: During time of inspection, the following observations were made:
1) Plastic container used as scoop in green sauce
2) Bag of towels stored in dry chick pea container
3) Towel used to cover dry sweet batter
Corrective Action(s): 1) Ensure that proper scoops with food products with handles facing out

Observation (CORRECTED DURING INSPECTION): -During time of inspection, doors in kitchen facility observed to be open with no screen door to prevent entry of pests
- Operator informed that screen doors are on order
Corrective Action(s): - Doors were closed during time of inspection
- Gaps >1/4" are still apparent
- Ensure that if doors are open, screen doors are used and that no gaps/ entry points are available for entry of pests
- Screen doors anticipated in 6 weeks
- Do not open doors until then

Observation: During time of inspection, the following observations were made:
1) Common touch areas throughout facility has slight - moderate food debris/ spillage build up
2) Food debris (naan build up in corner)
3) 3 compartment sinks - backsplash require cleaning (spillage/ mildew build up)
4) Food debris build up observed underneath 3 compartment sink
5) Spice storage throughout facility requires cleaning up within
6) Food debris buildup observed underneath requirement opposite of the main cook line
7) Shelving requires cleaning in sweets/ dairy cooler
8) Potato press requires cleaning
9) Ice machine has slight mildew accumulation on plastic divider
10) Walk-in freezer, in need to general organization and cleaning, observed to be disorganized
11) Mop sink back splash has moderate mildew accumulation, required cleaning
Corrective Action(s): The following corrections are required to be made:
1) Ensure that all common touch areas are cleaned, wiped down, sanitized then maintained on a regular basis
2 - 9) Ensure that food debris/ spillage is removed, and that these areas are cleaned and wiped down thoroughly and maintained on a frequent basis
10) Ensure this area is re-organized and spillage removed
11) Ensure to clean, wipe down and sanitize this area

Observation: Lighting required in dish pit, light was observed to be burnt out during time of inspection

- All handwashing stations equipped with hot/cold running water, liquid soap and paper towels except for the above noted
- All temperatures meet health requirements:
* Walk in cooler #1 (main) at <4C
* Walk in cooler #2 (dairy/ sweets) at 4.9C
* Walk- in freezer at -18C
* Upright freezer (stainless) at -17C
* Line coolers in front kitchen/ restaurant at 4C or below
* Hot holding buffet line maintaining food items at >60C
- Low temperature dishwasher available, final rinse at 50ppm chlorine sanitizer
- High temperature pot-washer available, adequate sanitization temperature reached via hot water, (at or above 71C)
- Commerical fume hoods/ canopies maintained in satisfactory condition
- PCO (Orkin Pest Control) services facility on monthly basis, invoices are kept in centralized location
- No evidence of rodents detected during time of inspection
- General sanitation can be improved
