Follow up inspection regarding the commercial dishwasher. The hot water tank for the dishwasher has been adjusted and the water temperature measured inside of the machine is now 73 C (71 C or hotter required). The temperature gauge reads over 82 C and this is what should be recorded daily and checked frequently throughout the day.
