Observation (CORRECTED DURING INSPECTION): Chest display cooler in kitchen air temperature measured at 8 degree C. Owner stated that this cooler was defrosted last night, and restarted this morning.
Corrective Action(s): Immediately move all cold potential hazardous food to other cooler that can provide adequate temperature (4 degree C or less). Adjust/service this cooler to ensure temperature can be maintained at 4 degree C or under.

- Insert cooler temperature at 2 degree C
- Upright freezer temperature at -21 degree C
- chest freezer temperature at -18 degree C
- Hot holding units temperature at 66 degree C
- High temperature dishwasher final rinse plate surface temperature at 71.1 degree C
- Chlorine in sanitizer bucket measured at 100 ppm, wiping cloth is fully immersed in the sanitizer
- General sanitation is good, no sign of pest noted at the time of inspection
- Staff on-site has valid FoodSafe
- Health permit posted in plain view to public

**Recommendation: Daily temperature record for all refrigeration units should be maintained to ensure food is being stored in a safe manner.
