Corrective Action(s): Pull out equipment so that hard to reach areas can be properly cleaned and sanitized, and do so on a weekly basis. Scrape of any old food debris that has been caked on.

Comments

**Clean dishes still stored on top of prep table in an unprotected manner. Operated stated he will be installing new shelving for storage of clean dishes.

- Ventilation canopy baffles have been cleaned. Ensure they are cleaned regularly to prevent grease accumulation.
- Floors, equipment, and walls in corner of kitchen by freezers and upright cooler have been cleaned
- Upright freezer has been defrosted
- All food items stored in coolers and freezers are now properly covered - please maintain this!
- Dry ingredient containers are also now properly covered, scoops stored in designated container. Ensure scoops are cleaned and sanitized daily.
- Food stored in prep cooler inserts were measured to be at or below 4C
- Sanitizer solution had a chlorine residual of 200 ppm detected

*A follow-up inspection will occur to check on sanitation maintenance and for the new shelving/rack for clean dishes.
