Observation: Diswasher final rinse temperature registered 55, 47 and 46 degrees C during three consecutive runs.
Corrective Action(s): Repair or service the dishwasher so that it reaches at least 71 C at the plate surface or 82 C/180 F at the temperature guage.
Until then all dishes must be sanitized manually. (Immediatel).

Observation: Mice droppings noticed behind the range, movable steam table , underneath the dishwaher and underenealth the dry storage shelves in the corner
Corrective Action(s): Clean the entire floor throughout the kitchen and storage areas to remove any mice droppings. Place mice traps along the walls behind equipment Ensure that any holes or gaps on the outside of the building are sealed or patched (Immediately).
