Observation: Cardboards used for lining shelves are soiled. Lids of the green garbage can used for storing flour..etc are dirty. Mold is found on the racks inside one of the reach-in coolers. Shelves in the walk-in are rusty.
Corrective Action(s): Remove cardboards and do not use them to line shelves. Clean the racks in the reach-in. Clean the lids. Obtain racks that are smooth and cleanable.
