Observation (CORRECTED DURING INSPECTION): Paper towels were not avaialable at the hand washing sink in downstairs lounge area. Staff stated they were using bar towels to dry hands.
Corrective Action(s): Hands must be dried with single-use paper towels. Ensure this hand washing station is equipped with a paper towel dispenser.

Comments

- Upstairs renovation for the new prep kitchen has been completed. Kitchen constructed as per approved floor plans. *Clean utensils stored directly above garbage bins must be relocated to an area protected from potential contamination.
Note: Sandwich prep cooler was not working and was not used for storing any food items. Prep cooler to be repaired/replaced.
- Undercounter cooler in newly renovated area measured at 3C and was equipped with an accurate thermometer
- Hand sink in renovated area properly supplied with liquid soap and paper towels
- Sanitizer spray bottle measured at 200 ppm (Quats)
- High-temperature dishwasher reached 75C at dish surface during rinse cycle - good
- Hot holding unit not in use at time of inspection.
- Temperature records well-maintained and up to date
- Foodsafe certified staff on-site
*Health approval to operate the upstairs kitchen is granted at this time

Downstairs bar/lounge area:
- Hand sink supplied with liquid soap. *Need paper towel dispenser as well.
- High-temperature dishwasher (used for glasses) reached 74C at dish surface during rinse cycle
- Sanitizer spray bottle available at 200 ppm (Quats) in spray bottle and from dispensing unit
- Walk-in cooler measured at 1C (shared with brewing/production area)
- Chest freezer (stored in brewing/production area) satisfactory
