Observation: Mechanical dishwasher final rinse does not reach required sanitatizing temperature 71C on the dish surface.
Corrective Action(s): Repair the mechanical dishwasher so that final rinse temperature reaches at least 71C or 160F on the dish surface. Record the temperature daily and keep the temperature monitoring log on-site.

Observation: A smal water leak was observed around hot water tank in the chemical storage room.
Corrective Action(s): Maintain plumbing so that there is no water leak as it can be a source of water for potential pest.

Comments

Routine inspection
- Hand washing stations are provided with liquid soap and paper towels. NOTE: Water flow is low in one hand washing sink.
Reminder: Ensure hand washing station in Bakery supplied with hand soap and paper towels. And, hand sink is only used for hand washing.
- Sanitizer, bleach solution 100 ppm available in spray bottles. Making solution was discussed with staff. Ensure to obtain chlorine test papers so that staff could test the solution concentration.
- No obvious sign of pest activity observed at this date.
- UV lighting available for fly control.
- All coolers are at or below 4C. All freezers are at or below -18C. Temperature monitoring log noted.
- Storage is clean and organized. Well lit and food stored off the floor.
- Staff washroom maintained.
Cleaning and sanitation procedure for ice cream machine followed.
- Manual dishwashing procedure discussed with staff.
