Observation: Observed a couple of areas with excessive build up (minor) of food debris and/or generally dirty:
- Vegetable walk in cooler floor, specifically behind wheels/legs of shelves;
- base of prep cooler inner cavity;
- shelf above beverage counter in serving area.
Corrective Action(s): Clean up this area. Review cleaning procedures with staff.

Comments

*Make sure staff fill third compartment sink with Quats sanitizer from dispenser only. If a sink is needed for just hot water it should only be in the middle sink.

- Cooling units less than 4 C.
- Hot holding above 60 C.
- Freezers less than -18 C.
- Dishwasher at 72 C at plate.
- Quats in sani-buckets and at source above 200 ppm. OK.
- Handwash stations good.

Fruit/drain fly population much better in all areas including beverage station. Only a few noted.
Floor fixed.
**ceiling tiles to be replaced along with service door.

Review of romaine lettuce advisory with operator.
