Routine inspection conducted today:
Handwash stations accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at ≤ 4C.
All freezer units were at ≤ -18C.
Hot hold units were at > 60C.
3-compartment sink available for manual dishwashing. Drain plugs available.
As per staff, meat slicer cleaned and sprayed down with sanitizer every hour and deep cleaning is done at the end of the day.
Proper thawing observed during the inspection - in cold running water.
Note: One of the QUAT sanitizer spray bottles was noted with 150 ppm QUAT at the time of inspection. Noted that the QUAT dispenser must be ran for a little while before it is able to attain 200 ppm. Contact your chemical supplier to address this issue. All other QUAT sanitizer spay bottles and the dispenser by the other 3 compartment sink (nearby oven) were dispensing at 200 ppm QUAT.
Organization and sanitation satisfactory at the time of inspection.
No pest activities noted during the inspection.
