Observation (CORRECTED DURING INSPECTION): 1) Gulab jamun at front display getting left out at room temperature (>25C)
2) Display cooler measuring 8C at coldest during inspection (1hr +)
3) Main walk in cooler measuring 12C. All product at 12C or higher
Corrective Action(s): Gulab jamun must be stored at 4C or less.
All coolers MUST keep product at a maximum temperature of 4C. Staff checking temperatures must know what they're checking for, and what to do if temperature reading are too high.
-> All product moved to alternate walk in cooler at time of inspection.

Observation (CORRECTED DURING INSPECTION): Dishwasher drain pipe currently draining into a bin on the floor. This bin is getting used for presoaking equipment prior to manual wash
Corrective Action(s): Do not use dirty waste water as a presoak for equipment. Fill a sink with detergent (or presoak) for presoaking

Observation: Rodent droppings found in storage kitchen:
- Along walls (North, West, East)
- In smaller storage room across from standing freezer
Corrective Action(s): 1) Pull out all storage racks and goods from walls
2) Make a bleach solution in a spray bottle. Use 9 parts water to 1 part bleach. Use this to spray down droppings, then wipe up while wet
3) Ensure ALL of your ingredients are sealed in bins/containers with tight fitting lids

Have your 3rd party pest control company do their inspection. Follow instructions on their report

Observation: Both walk in cooler and display cooler malfunctioning. Display reading 8C at coldest, while walk in measuring 12-13C
Corrective Action(s): These machines have been increasing in temperature for a week according to temperature logs on site. No action was taken

Please see above violations.
It is critical that your staff understand the significance of temperature checks of equipment. If temperatures are high, product is not safe. Owners/managers must be notified to rectify the problem.
Practice at this facility has been to store gulab jamun at room temperature. Numerous checks have been done on this product showing them as a hazardous (and non shelf stable) sweet.
Until you can prove otherwise, have these products stored at 4C or less (kept in your functioning display cooler)
Display cooler condenser was found blocked at time of inspection. Temperatures begun decreasing
Sanitation in storage kitchen to be improved to get rid of rodent infestation.

Call me tomorrow to schedule a follow up inspection in order to use your walk in cooler prior to your Wed opening.
