Observation: - Mouse dropping noted on floor under 2 door cooler (right side) in sandwich prep area.
Corrective Action(s): - Clean up droppings and disinfect floor area. Notify Pest Control company of rodent activity within this area so that monitoring and control measures are applied. If any additional droppings are noted, clean and disinfect promptly. To be corrected by: 10-June-2022

Observation: - Thermometer in rotisserie case is not working (ie. not reading temperature)

Comments

- General sanitation satisfactory with the exception of floor area where mouse droppings were present (noted in violation above). Sanitation in area around/under combi oven has improved since previous routine inspection.
- Handsinks within deli area and sandwich prep area supplied with liquid soap and paper towel
- Quats sanitizer was present in labelled spray bottles for sanitizing food contact surfaces including food contact equipment (ie. meat slicer). Concentration of spray bottles checked was 200ppm.
Deli staff reported that deli slicers are now being cleaned and sanitized every 2 hours.
- Quats sanitizer was present at warewashing sinks. Concentration from dispenser was 200ppm.

Cold holding units were maintaining required temperatures:
- Walk-in cooler (rotisserie chicken) 3C
- Undercounter coolers (sandwich prep area) 3C, 4C
- 3 door freezer -18C
- Walk-in cooler (deli meats) 1C
- Deli display units (meats and cheeses) 3C, (salads) 0C
- Coolers in retail area (packaged deli products) 4C or colder. Product levels maintained below product fill level.
- Rotisserie case (rotisserie chicken) 61-64C

Rotisserie case and hot service case were maintaining potentially hazardous foods at >60C
- rotisserie chicken 63-67C
- chicken wings, chicken strips 61-64C

Cook temperatures and hot holding temperatures are checked and recorded. Records were up to date.
Cooler temperatures are monitored and recorded. Records were up to date.

Pest Control contract is in place. Service frequency is increased when any pest activity is noted.
