General sanitation and maintenance are good.
Glasswasher at the front must be checked each morning for presence of sanitizer in the rinse water. Record the reading on the record sheet (2 copies provided).
Ensure staff uniforms, aprons are not stored on top of food packaging materials (i.e., exposed stack of parchment papers).
Some food debris are pushed to the back of the wall under the cooking equipment and in the bar area. Check periodically to ensure that these are removed to prevent these areas from becoming a breeding ground for flies.
Sanitizer is detected in the dishwasher in the kitchen.
Temperature of refrigeration units are satisfactory.
Handwashing stations are satisfactory.
