Corrective Action(s): All items are to be stored in designated areas. Organize storage areas and shelving. Ensure items/equipment are being stored off of floor.

Comments

- Temperature Control: Monitoring being conducted. Temperature logs reviewed.
- Manual Dishwashing: 4 Step Method (Quats): Ok. Ensure all food contact surfaces are washed and disinfected after use or on a timely manner. (ie: 3-4 hours) All cleaned implements and take out containers are to be kept stored in a sanitary manner. (ie: knife storage holders and above work areas)
- Mechanical Dishwasher: High Temp: Ok.
- Wiping cloth storage: Ok. Monitor solution. Change routinely. Cloths are to be kept completely submerged at all times. Limit the number of cloths used at any given time.
- Food Storage: Stock rotation discussed. Items are to be kept stored off of floors.
- Sanitary Facilities: Ok.
- Chemical Storage: Ok.
- Staff Hygiene: Discussed.
- Pest Control: Monitoring required.
- Commercial Equipment is to be cleaned and disinfected according to the manufacturers specs.
- Garbage, Recycling and Composting Storage: Ensure all items are being are being kept stored in covered, rodent proof containers. Storage area is to be kept clean and organized. Kitchen: garbage storage container locations discussed.
