Routine inspection is conducted.
- All wine making process is conducted by operators or fully assisted by operator/ staff. Customers are allowed to wash and fill their own bottles.
- Facility also has wine production area separate from customer wine making area
- Handsinks at the front bottling area/ customers' wine making area, wine production area and washrooms are supplied with hot and cold running water, soap and paper towel
- Dishwasher or bottler washer in customers area is measured at 12.5ppm iodine concentration
- Washer for carboys uses sani brew (chlorinated trisodium phosphate), concentration of chlorine residual was measured at 50ppm during wash cycle. Any wine making carboys/growlers are rinsed with potassium metabisulphate
- Sanitizer spray bottles were measured at 100ppm chlorine concentration
- All equipment is maintained in clean and sanitary conditions, storage is satisfactory
- Discussed equipment sanitizing processes with operator: any piece of equipment that touches the wine is first rinsed and then sanitized with potassium metabisulphate
- Two compartment sink available for cleaning and sanitizing of large growlers.
- No evidence of pest activity is noted at the time of inspection
- General sanitation is satisfactory
