Observation (CORRECTED DURING INSPECTION): Calamari in ice bucket internal temperature was at 6.9 C. Calamari was stored in ice bucket < 2 hours and moved to cooler.

Observation (CORRECTED DURING INSPECTION): Quats sanitizer in bucket and 3 compartment sink measured at 50 ppm. Quats sanitizer must be at 200 ppm to ensure effective sanitizing of food contact surfaces to prevent cross contamination. Solution changed during inspection, ensure sanitizer is made fresh on regular schedule and as needed during heavy use.

Observation (CORRECTED DURING INSPECTION): Ice scoop stored in ice machine. Store ice scoop in separate container that is washed / sanitized regularly to prevent contamination.

Observation (CORRECTED DURING INSPECTION): Chicken thawed at room temperature. Always thaw frozen foods in acceptable manner to prevent bacterial growth (ie in cooler, under cold running water). Chicken was moved to cooler during inspection.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: No staff onsite with FoodSafe Level 1. Ensure that at least one staff member on duty has Food safety training (FoodSafe) at all times. Supervisor on duty currently planning to take FoodSafe course.

Ensure that potentially hazardous food is always stored at < 4 C to prevent bacterial growth. ensure that ice coolers entire outside of container in future and monitor temperature.
