302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) Wiping cloths were stored on countertops in the back and in the front service area. The one cloth that was in a sanitizer solution, did not have any detectable sanitizer in it.

2) The dishwasher rinse temperature was at 68 degC after 5 tries.
Corrective Action(s): 1) As discussed, when not in use, ALL wiping cloths must be stored in a sanitizing solution. This solution should be changed every 2-3 hours.

2) Get the dishwasher fixed. The rinse temperature on the gauge must show at least 80 degC (71 degC at plate level). Until the dishwasher is fixed, after running the dishes in the dishwasher, soak them in the 200ppm bleach solution (1 oz bleach per ga water) in the sink for at least 2 minutes before air drying (do not rinse with water after sanitizing)
