Observation: Small amount of mice droppings observed at the back area near the two-compartment sink (moreover, under two-compartment sink in the mice trap one mouse), in the office - between wall and chest freezer, in the staff washroom - under the hand sink.
Corrective Action(s): Please remove all rodent droppings with 1 part Bleach and 9 parts water. Continue visual inspections.
The regular pest control in place. Traps set.

Comments

Kitchen:
-Prep. table inserts cooler at 2.2°C.
-Walk-in cooler < 4°C (vegetables).
-Walk-in cooler/freezer combo - cooler < 4.0 C; freezer at - 18 C.
Note: No food hot holding at the time of inspection.
-All equipment and utensils stored in sanitary condition.
-Corner hand sink supplied with liquid soap and paper towel in dispensers.
-Hand sink near the walk-in cooler/freezer combo supplied with hot/cold running water, liquid hand soap, and single sue paper towels.
Note: A heavy duty wall-mounted storage shelf is installed in the kitchen (above the prep.table insert cooler).
-Surface Chlorine sanitizer supplied in labeled bucket at 100 ppm. Balk Bleach is available on site.
-Low temperature dishwasher measured 50 ppm Chlorine at utensil surfac during final rinse cycle.

Back Kitchen area:
-Back kitchen area well organized.
-Mop sink - satisfactory.
-Two-compartment prep sink - satisfactory.

Storage area:
-All dry goods and cans stored safely at the time of inspection (off the floor & in pest proof containers with proper lids).
- Storage - organized.

Bar in the party room:
-Note: Not in use at the time of inspection.
-Hand sink supplied with liquid soap; cold and hot running water - available. (Paper towel must be available neat the hand sink during operation hours.)
-Storage for equipment and utensils well organized.
Note: Under counter cooler is turned on but no food in it.

Front:
-Beverage cooler at 3.2 C.
-Surface sanitizer - available.
-Health Permit is posted.

General
-All coolers equipped with accurate thermometers.
-All foods obtained from approved sources.
-Washrooms used by staff are in sanitary condition. Washroom hand sinks supplied with hot and cold running water, liquid hand soap, and paper towels.
-Ventilation hoods clean with no grease accumulation.
-General sanitation - satisfactory (please see violation sections).
- Two-chest freezers in the office/storage area - satisfactory.
