The sandwich & pastry display cooler product temperatures measure 8 to 10 C. Until such time as the cooler can maintain temperatures below 4 C, no potentially hazardous foods may be displayed/stored in this cooler. In the interim, 'sample food products' may be stored in the cooler for display only, and the remainder of the potentially hazardous products must be stored in a properly functioning refrigeration unit below 4 C. All refrigeration units, other than the sandwich & pastry display cooler are presently maintaining food products below 4 C.
