203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 3 buckets of freshly cooked gravy were stored in the walk-in cooler and the temperature was noted ~40C. Upon inquiry, staff stated that gravy was prepared one hour ago. All 3 buckets were moved outside at room temperature and portioned out in shallow pans for cooling.
Corrective Action(s): - To prevent bacterial growth and production of toxins that could result in food contamination, ensure that the potentially hazardous foods that have been cooked and are intended to be kept under refrigerated storage prior to serving, are to be cooled from 60°C (140°F) to 20°C (68°F) or less within two hours and then from 20°C (68°F) to 4°C (40°F) or less within 4 hours.
- It is recommended to use shallow pans/containers for cooling and storing food. Using large buckets can slow down the cooling process and food can remain hot (in danger zone) in the middle/bottom area of bucket leading to bacterial growth.

Observation: 3 compartment dishwashing sink available on both main floor and upstairs for manual dishwashing. However, no drain plugs were observed on site to carry out manual dishwashing steps - wash, rinse, sanitize & air dry.
Corrective Action(s): To ensure that utensils/dishes/food contact surfaces are adequately washed and sanitized, follow proper manual dishwashing steps and have the drain plugs available on site at all times.

Observation (CORRECTED DURING INSPECTION): In walk-in cooler, crate of peeled onions was stored directly on floor. Staff moved the crate to the shelf at the time of inspection.
Corrective Action(s): To prevent the risk of food contamination, ensure that food is stored at least 15cm off the floor.

Observation: 1. Build-up of food debris observed on the bottom shelf of white stand-up freezer.
2. Ice build-up observed in the chest freezers stored upstairs.
Corrective Action(s): To prevent the risk of food contamination, ensure that the equipment is maintained in good sanitary condition. Clean and sanitize the abovementioned equipment.

Observation: The lid/door of small chest freezer stored upstairs is worn out from the inside.
Corrective Action(s): Repair the door of chest freezer to ensure that the surface is made of smooth, easy to clean & impervious material to prevent any risk of food contamination.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature (coolers to be at 4C or less, freezers at -18C or less):
- Pizza prep cooler at 3C
- Pop cooler at 4C
- Prep cooler near pizza prep area at 4C
- Walk-in cooler at 3C
- White stand-up freezer at -15C
- 2 door cooler at 3C
- Walk-in cooler (upstairs) at 2C
- Undercounter cooler (upstairs) at 2C
- 3 x Chest freezers (upstairs) at -18C or less
- Pizza slices hot held at 68C
- Temperature logs were maintained and found up-to-date.

Storage:
- All food products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer spray bottle available (food prep area & upstairs) and the concentration of bleach noted at 200ppm.
- 3-compartment sink available for manual dishwashing. See violation above.
- Utensils were stored in sanitary manner.
- Washroom maintained in good sanitary condition with supply of hot/cold running water, liquid soap and single-use paper towels.

Pest Management:
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was posted in a conspicuous location.
