- Hand sinks properly supplied with hot and cold running water, liquid soap, and paper towels
- High-temperature dishwasher reached 78C at the dish surface during rinse cycle. Good - minimum of 71C required.
- Quats sanitizer solution available in spray bottle at 200 ppm. Chef also manually mixes sanitizer solution in sanitizer pail. *Ensure to obtain new Quat test strips, as the current test strips onsite no longer work.
- Cooler measured at 2C. Freezer temperature satisfactory. Accurate thermometers available. Temperature logs well-maintained.
- Hot-held rice measured at above 60C
- Food storage practices satisfactory. All food stored properly off the floor and covered. Dry storage area satisfactory.
- General sanitation satisfactory at time of inspection
- No signs of pest activity noted at time of inspection
- Chef has valid FoodSafe certification (or equivalent)
