- Warehouse for wholesale distribution with a retail store front.
- Retail sliding door cooler: 4 deg C
- Warehouse Walk-In Freezer: -15 deg C. Food products maintained in a frozen state.
- Warehouse Chest Freezer (cheese): -17 deg C
- "Don Chendo" Chorizo is processed and packaged by Columbus Meats. Receipts available.
- Packaged cheeses (Quesco Fresco, Oaxaca, Cotija, Asadero) are supplied by Flamingo Foods. Receipts available.
- Handsink and washroom sinks provided with hot and cold running water, liquid soap, and papertowels.
- General sanitation of premises appears satisfactory. Ensure that pallets are regularly rotated so that area can be cleaned thoroughly.
- No signs of pest activity noted at time of inspection. Regular pest control service provided by Pest Detective.
- Ensure all areas of the premises are accessible for pest control service.
- Continue monitoring for pest activity. Contact your pest control company if new pest activity is observed. Follow recommendations provided by your pest control company.


Note:

1. Operator created a packaging area in the warehouse area. A handsink and 2-compartment sink with drainboard for warewashing has been installed in packaging area. While the operator had informed Fraser Health regarding proposed changes, written Health Approval was not provided. Fraser Health had directed the operator to submit plans to the City of Burnaby to go through the formal plan approval process. The packaging area with handsink and 2-compartment sink installations are acceptable at this time; however, verification will be conducted to ensure that the operator contacted the City of Burnaby to obtain and meet all necessary Building and Plumbing Department permits/ requirements.

2. Operator installed a walk-in freezer in the warehouse area. The operator had informed Fraser Health regarding proposed changes and was directed to submit plans to the City of Burnaby to go through the formal plan approval process and obtain written Health Approval from Fraser Health. The walk-in freezer location and unit appear acceptable at this time; however, verification will be conducted to ensure that the operator contacted the City of Burnaby to obtain and meet all necessary Building and Plumbing Department permits/ requirements.

**As previously communicated with the operator, written Health Approval from Fraser Health MUST be obtained before making any changes/ additions/ renovations to the existing premises and/ or operation.**

3. Operator has proposed to process meat products (barbacoas and carnitas) at a nearby commissary. Products will be packaged at the commissary for retail sale at the premises. Operator must obtain Health Approval before processing meat products for sale at the premises.
