Observation (CORRECTED DURING INSPECTION): Food products inside food preparation cooler (humus) internally probed at 8C. They were prepared this morning approximately 2 hours ago.
Corrective Action(s): Food products were transferred to the walk-in cooler (at 4C at time of inspection).

Observation: Rodent droppings are still observed in the janitorial area along the edges of the walls across from the mop sink.
Corrective Action(s): Operator had removed the rodent droppings with a strong bleach solution at time of inspection. Operator states that a new professional pest control company will be hired to monitor for rodents and to identify any other entry points into the building. It is ESSENTIAL that all food items are covered with tight-fitted lids after use, and that the entire kitchen area is cleaned nightly as per your sanitation plan.

Observation: Prep cooler was at approximately 6C (bottom) and 8C (top) at time of inspection.
Corrective Action(s): Technician has been called. You MUST keep your food products at 4C or less at all times. Do NOT use the prep cooler until a follow-up inspection has been conducted to verify that temperatures can be maintained.

Another follow-up inspection conducted (from RPT#: JMAA-BCFTUA on May 23, 2019). Issues from previous inspection have not re-emerged:
Low-temperature dishwasher releases 100 ppm at final rinse cycle
Walk-in cooler at 3C
Dough mixer in satisfactory sanitary condition
Shelving underneath tables are now lined with a plastic, waterproof liner
Manager present on site with valid FoodSafe 1
