209 - Food not protected from contamination [s. 12(a)]
Observation: The following was noted in the walk-in cooler:
1. A container (2 in total) of onion and broccoli stored directly on the floor.
2. Raw shrimp stored on the shelf above cooked chicken. Another bowl of cooked chicken was stored directly on top (on top of the cling wrap) of a bowl of raw chicken.
3. Many of the food in the walk-in cooler was stored uncovered. Note: Spring rolls were also stored uncovered in the single-door reach-in freezer.
Corrective Action(s): 1. Store the container of onion and broccoli at least 6 inches off the floor. This allows for effective cleaning and sanitation of the floor.
2. Store raw food below and away from cooked, ready-to-eat food and produce to avoid potential cross-contamination.
3. All food in the walk-in cooler and freezer must be stored protected with a plastic wrap or lid to avoid potential cross-contamination of food.

Observation: Black debris noted on the door gaskets and interior door of the reach-in cooler and reach-in freezer.
Corrective Action(s): Clean and sanitize the above mentioned areas and maintain in a sanitary condition. Add to your sanitation schedule if not included already.

Routine inspection conducted today:
Note: Dining room area closed due to COVID-19 pandemic.
Handwash sinks, including the staff restrooms, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
Chlorine sanitizer available in 2 spray bottles. 100 - 200 ppm detected in the spray bottles.
High temperature dish machine capable of reaching 78C at the plate level during the rinse cycle.
Drain plugs available for 3-compartment sink.
All refrigeration units were at ≤ 4C.
All freezer units were at ≤ -18C.
Rice was over 60C in the rice cooker.
Deep fryers and fume hood noted in a sanitary condition at the time of inspection. Note: Fume hood due for professional cleaning on 09/30/2022.
No pest activities noted during the inspection.
FOODSAFE level 1 certificate verified for operator (on-site at the time of inspection) - expires May 5, 2027.
