It was stated in use deli slicers are sanitized every two hours and completely disassembled for cleaning and sanitizing every four hours.
Three compartment sinks are supplied with hot and cold running water, built in drain plugs, detergent, and sanitizer from dispensing units at 200 ppm quaternary ammonium compounds (quats).
Pot and pan washer measured 75 degrees C at the utensil surface during the final rinse (minimum required: 71 degrees C at the utensil surface).
Sanitizer available in labeled spray bottles at 200 ppm quats.
Hair nets and non-latex gloves available.
No signs of pest activity observed at time of inspection.
Permit posted.
